HOW TO BREW

ESPRESSO MACHINE

Espresso Grind – Brew ratio 1:2

Preheat portafilter.

Fill with 20g/2 tbs ground coffee.

Tamp with even firm pressure smooth and level.

Extract 40g brewed espresso in 25 – 35 seconds.

To extract faster, grind coffee coarser. To extract slower, grind coffee finer.

Blend with steamed milk (60° C / 140° F) and serve.

*Remember the brew ratio is the relationship between the amount of dry coffee used (the dose) and the amount of coffee extracted (the yield).

STOVE TOP

Slightly Coarser than Espresso Grind

Fill base with cold water to just below relief valve.

Fill basket with ground coffee, maintain a loose fill, once at the top, level it off.

Screw brew chamber on top tightly.

Brew on a low heat until it starts to gurgle, switch heat off and allow to rest for 2 minutes.

Drink neat or blend at a ratio of 1/3 coffee to desired ratios of hot water (95° C /205° F) or warm milk (60° C / 140° F).

FRENCH PRESS/ PLUNGER

Best Ground Coarse. For a more intense cup, grind finer.

Preheat plunger by filling with boiling water, assemble, and then empty.

Add 1 tablespoon of ground coffee per person / cups desired.

Add the required number of cups of slightly cooled boiled water (95° C /205° F) then gently stir to mix the grounds.

Replace lid, allow to brew for 4 minutes, before slowly depressing the plunger.

Serve all cups, even if you want a second one later, as leaving the brew in the plunger will over brew the coffee. It’s best to make and serve fresh or when required.

Drink neat or add milk to taste.

DRIP/ BATCH BREW

Very convenient way to make your morning coffee.

Grind coffee beans to medium-fine or when you buy from 4COFF Roasting Company specify the brew method and the coffee will come pre-grounded for you.

If using a paper filter, place in filter basket and moisten with hot water. Let water run through to carafe and discard.

To make four 6-oz. cups, place about 6 Tbsp. ground coffee into filter. Pour 24 oz. cold water into water reservoir. Brew ratio really is to taste but we like a ratio of 1(Coffee):15(Water) or 20g/2tbs of coffee to 330ml of water.

Now Press start.

AEROPRESS

Fairly complex coffee with good body and aroma.

Grind coffee beans to fine or when you buy from 4COFF Roasting Company specify the brew method and the coffee will come pre-grounded for you.

Wet the rubber piston and insert it into the brewing cylinder about ¼ inch. Flip the brewer upside down and place on gram scale. Zero the scale.

Add 17 grams / 1 ¼ tbs of coffee to the cylinder. Zero the scale.

Slowly add 250 grams of hot filtered water (95° C /205° F).

Let sit for 1 and a half minutes.

Place paper filter into filter holder, wet the filter with hot water, and lock holder in place.

Flip AeroPress over and stand on a mug. Gently press down on the brewing cylinder until there is no more water to push through the device.

I always prefer trying coffee without sugar or milk but feel free to add to taste.

POUR OVER

This one is a sweet well-balanced brew.

Grind coffee beans to medium-fine or when you buy form 4COFF Roasting Company specify the brew method and the coffee will come pre-grounded for you.

Place paper filter in the conical and moisten with hot water. Pour out the water.

Put Chemex on gram scale and zero the scale.

Put 32 grams or 2 ½ tablespoons ground coffee into the filter then zero the scale.

Then pour 70 grams / 69ml of hot water (95° C /205° F). in a circular motion just enough to cover the grinds. Wait 30 seconds, then pour the rest of the water still using the circular motion making sure you are covering all the grinds, stop when you get to 500 grams.

Note: Water should drain between 3 minutes, 30 seconds and 4 minutes, 15 seconds. If it takes longer, grind more coarsely; if less, grind more finely.
